After two days of trying to get Live TV to Plex i have found some settings that have worked.

I agree! Sorry mate, life kind of happened to me. I used to have heaps of spare time but then I quit the Army, moved to Perth, started a company, got married, had a baby and kinda wound up having no spare time.
I will endeavour to add some new content when I can.
